Corned Seitan with Smoky Tomato-Mushroom Ragu – House made seitan(protein rich wheat gluten) cured in a corn beef like broth then sliced and seared to be served on a bed of roasted garlic mashed potatoes with a ragu of local organic greens, cherry tomatoes and oyster mushrooms smoked over hickory.
